Fogar do Santiso was established almost 25 years ago in the middle of the woods near the city of Santiago de Compostela. The mastermind behind it, Xose Santiso, decided to blend gastronomy, the cultural heritage of the area and sustainability. The result is amazing. Locations and decor follow the guidelines of tradition and style. Raw materials are delivered to each restaurant from their own organic orchards; they use solar panels, compost leftovers and residues and recycle any broken glass or bottles.
